Pork and Leek Casserole

I've finally got round to clearing the last of the winter and early spring crops out of the garden in time for my spring planting.  Now what to do with the volume of leeks on my doorstep!  I found a couple of recipes that I've combined for a great mid week meal, which we had last night.  It was liked by all, so that's a win for me.  Here it is:

 

Pork Balls

6oog pork mince

1/4 C chopped flat leaf parsley

1/2 C soft bread crumbs

1 T whole seed mustard

1 T tomato paste

2 T flour

 

Leeks

1KG fresh leeks sliced in 5 cm lengths

50g butter

1 handful of fresh or dried thyme

 

Sauce

2 T honey

2 T soy sauce

2 t ginger crushed

2 cloves garlic crushed

1 T tomato sauce

3/4 C chicken sauce

 

Method

Add chopped leeks and butter to shallow pot and simmer on stove until soft.

Mix pork balls ingredients together in a bowl, then roll into 4 cm balls.

Fry in frying pan with a little oil until brown on all sides.

Mix sauce ingredients together in a small bowl.

in a shallow oven dish place leeks to cover the bottom.

Add pork balls on top, then pour sauce over.

Bake in moderate oven for 25 to 30 minutes.

Serve with rice or mashed potatoes, with spring vegetables or salad.
